
Episode 13: Inclusion is Lucky

Is 13 a lucky or unlucky number? Bootie and Bossy discuss various lore about the number 13 and discover that the overriding message is "be inclusive!" You can definitely do that with Ina Garten's pork posole recipe, which is sure to feed a hungry and diverse crowd. As always, family stories are shared (Hi Mom!) and updates on our knitting projects.
About the Recipe:
This is a great recipe whether you are looking to feed a crowd or you want to have leftovers. The toppings are excellent for customizing it to everyone's tastes. We used Ina's recipe from her cookbook Cook Like a Pro but Bossy recommends marinating the pork overnight in a rub that consists of:
1 T Cumin
1T Chili Powder
1 t Oregano
1 T Salt
1 and 1/2 t ground pepper
2-3 cloves minced garlic
If you want a little more heat, add some cayenne pepper--1/4 tsp will give it a nice little zing.
She also recommends 2 cans of black beans to make it go further. You can saute the pork and then add the onions rather than doing it separately. We skipped adding the tortilla chips to the broth and instead recommend serving it on a bed of tortilla chips, if your family hasn't already eaten the entire bag! Whatever you do, don't skip the lime and cilantro at the end (and don't knit like my sister).
