Bossy's Balsamic Onions and Bootie's Vinaigrette

About the Recipe

These onions are sooooo good! They transform sandwiches, chicken, salad, quiche, etc. into culinary delights.

Balsamic Onions:

Ingredients:

4-5 Red onions, thinly sliced--1/4-1/2 inch thick (for an easy way to slice onions, check out this Gordon Ramsey video)

Glug of olive oil--@3 Tablespoons

Glug of Balsamic vinegar @3 Tablespoons

Salt and Pepper to taste


Mix the onions with the olive oil and vinegar, then add salt and pepper. Bake at 425 degree oven for 20 minutes. Stir and stick them back in the oven for another ten minutes. Add another glug of balsamic vinegar.


Bootie's Vinaigrette:

Ingredients

1 part Dijon mustard (Bootie uses Maille from France or World Market)

1 part Balsamic vinegar

2 parts olive oil

Put mustard and vinegar in a jar, and stir until well mixed. Add olive oil and stir or shake until well emulsified (it might take a while!). Add salt and pepper, thyme or whatever floats your boat.
