About the Recipe

This cocktail is so delicious that you won't mind being stranded on the lake during your Colonial lazy river experience! It starts with a simple syrup infused with ginger, mint and lime. Rum, ginger beer, lime and mint round out the flavors and give it fizz. It also makes a great mocktail. Just leave out the rum!

Bossy's Colonial Ginger Mint Lime Cocktail 

1 oz Ginger syrup, see below

1 oz White Rum, such as Bacardi's

2 oz Ginger Beer

1 T fresh lime juice

Fresh mint and lime wedges

Serve over ice and garnish with fresh mint and lime.

Ginger Lime Mint infused simple syrup

1/3 cup fresh ginger, grated or chopped

2-3 limes, juiced (save rinds)

3-4 sprigs of mint

2 cups water

2 cups sugar

Boil sugar and water with ginger, mint, lime juice, and lime rinds until sugar is dissolved, continue to boil for 10 minutes. Turn heat down and simmer for 5 more minutes. Take off stove and cool until room temperature. Strain out ginger, lime wedges and mint. Can be stored in the fridge for several months, until the wind is right for your Champeaux Road lazy river experience!
