About the Recipe
Thankfully Mom is OK and so we need a drink! We were able to get away for the day and head on over to Skein and Tipple in Clinton, Washington (Whidbey Island). Skein and Tipple is such an amazing location. It's a yarn store AND a speakeasy. Yarn and cocktails and music? Sign us up! This cocktail was the favorite amongst the three of us (Bossy's son joined us for the adventure and it was his pick, oh the joys of having adult children!). Our version is a reenactment of their cocktail.

2 ounces rye whiskey
1 and 1/2-2 ounces honey ginger syrup (see recipe below)
Juice of 1/2 lemon
Absinthe rinse (optional but recommended)
Angostura bitters
Lemon peel for garnish
For the honey syrup:
1/2 cup honey
1/2 cup water
1 thumb of ginger, chopped
Boil honey and water with ginger for 5 minutes or until honey dissolves, strain out ginger and cool.
Mix rye, honey syrup, and lemon juice in a cocktail shaker with ice. Shake it up, like your Tom Cruise in Cocktail or a close approximation. Rinse your glass with a little absinthe, pour in cocktail, add a few drops of the bitters and garnish with lemon peel. Cheers!
